Vero Beach Florida: Judyth Piazza Explores Fine Dining at Stax

Stax is quickly filling the void in Vero for a cool place, with a great atmosphere, and amazing food. After a long and successful tenure with their restaurant and club Havana in New Hope, Pennsylvania, Executive Chef Jane Faraco and husband Chef Jim Faraco opened Stax at 1931 Old Dixie Highway (the former site of the Undertow Restaurant). The new restaurant has been receiving rave reviews from customers and critics alike.

The name STAX is a play on our concept of stacking the entrees. We say our cuisine is "stacked" with flavor. Jane`s favorite is a braised, pulled-pork stacked over corn pudding with a red bell pepper sour cream crema and a New Mexican red BBQ sauce. Sous-Chef Josh Niebels loves the now famous Crab Cake Stack " lump crab cake stacked over fresh spinach, sautéed with extra virgin olive oil and garlic, over smashed potatoes and served with a Creole drizzle.
