Bacon Chimichangas With Gourmet Salsa!

Bacon Chimichangas with Gourmet Salsa

South of the border, in exotic and intoxicating Mexico, this delicious authentic meal called a "Chimichanga" is traditionally served with some fresh gourmet salsa, a bowl of chilled sour cream and a very simple green salad made of crisp lettuce, tomatoes and sliced or diced avocado.

Some people prefer their Chimichanga with beans and rice, others like it with chicken while still others enjoy it best with fish. I have friends that believe vegetarian Chimichangas are absolutely "to die for. If that`s all I had for dinner, I agree with them, I probably WOULD die!

As certified "Baconistas" fervently believe with all of our hearts, minds, spirits and souls that a truly delicious Chimichanga is always best served when prepared with some gourmet bacon!

Serves: 4


8 wheat tortillas

½ lb Gourmet Bacon

2 oz Cheddar cheese, grated

3 tablespoons chili sauce

Gourmet olive oil for frying


Begin by preparing your bacon by cooking it moderately crispy.

 If your tortillas are a little bit hard, you will definitely need to soften them up a bit so that they won`t crack and break when you wrap them around the filling.

This can be accomplished by wrapping them in a clean cotton towel and then placing them in a colander over a saucepan of boiling water for 20-30 seconds.

 Alternatively, you can easily soften them in the microwave for a few seconds; the choice is completely up to you!

Now chop / crumble your bacon into small, bite sized bits about the size of a peanut. 

Place 1 tablespoon of the bacon in the centre of each tortilla

Top with grated cheese and 1 teaspoon of the chili sauce.

Wrap up into a neat parcel and secure it with a toothpick or cocktail stick

Now carefully fry in hot your olive oil until golden all over.

Serve with a hearty helping of your favorite gourmet salsa and ENJOY!
