Learn the Rule in Pairing Wine with Chocolate

Learn the Rule in Pairing Wine with Chocolate

By Rocco Loosbrock

Recently, I had the opportunity to meet with Anne Murphy of who makes a wide variety of interesting chocolates many of which pair with wines so she got my attention.

I asked her to tell us here story and make some wine and chocolate pairing recommendations for us.

She told me that sixteen years ago she tasted the most amazing toffee crunch, made in my home state of California and she fell in love with this toffee. At the time she was selling medical equipment and contemplating children, so the thought of making her own toffee and chocolates was put aside. Fast forward to October 2007 and 10 years of staying at home with kidlets, she approached her husband about starting a business, selling a version of this toffee.
Much negotiation went on between her hubby and her (she said she was pretty much like a `dog-with-a-bone`) and he finally supported her idea of launching a gourmet chocolate business, out of the house, instead of getting a "real" job.
Year 2 of the business has defined where she headed and with the help of a business coach and plan, Decadent Delights is fast becoming one of the #1 gourmet chocolate companies in the US. What is interesting is that she is focused on company branding and marketing with customized labeling. There is no other company with this service-and the message on labels with gourmet chocolate. She is also specializing in flavors for events and tradeshows. Each box or bag has its own personalized label and decoration.
The chocolate is homemade in Amish Country and is guaranteed fresh, natural and delicious. No order is too small-and they do not charge minimums or set-up fees.

As an official "mompreneur" she works the business around her active, young family. She has 3 children (Maddie, 11; Spencer, 9; and Lily, 7) and have been married 16 years. When that bus pulls up at 3 o`clock, work stops and homework, practices, and dinner begins. The holidays do throw us all off with schedules, but a "chocolate" family understands.

Anne recommends to Pair Decadent Delights Gourmet Chocolate with your favorite boutique wine. The "rule" states: Keep the wine sweeter than the chocolate.

Here is an example:
