Cinco De Mayo Cheese & Bacon Jalapeño Rellanos!
Happy Cinco De Mayo to all of my Bacon Freak "Baconisitas!"
Living in Southern California, there`s two things that I know about the celebration of Cinco De Mayo!
One thing is that there is NO other Holiday Celebration that involves the consistent, all day long consumption of so much food and ...dare I say ... beverages!
Therefore, point #2, is that this means the odds are (A) that you will run out of food long before you run out of party reveling quests and (B) you better have plenty of food around to keep those beverages more safely balanced out in the favor of sobriety!
Here`s an amazing scrumptious recipe that will make all of your guests think you are a epicurean connoisseur and gastronomical genius, yet it takes only ½ hour to prepare, so if you run out of food mid way, you can save the party and the day by whipping these ever so delicious "Cheese and Bacon Jalapeno Rellenos" up every couple of hours if need be!
"Cheese and Bacon Jalapeno Rellenos."
(Prep Time: 20 min)
(Total Time: 30 min)
4 ounces soft Cream Cheese,
1 cup Shredded Cheddar Cheese
10 slices Gourmet Bacon, (Cooked medium well & crumbled)
2 tablespoons finely chopped onions
2 tablespoons chopped cilantro
1 clove garlic, minced
18 jalapeño peppers, cut lengthwise in half, seeds and membranes removed
Heat oven to 375 degrees F.
Mix all ingredients except peppers until well blended.
Spoon mixture into peppers. Place, filled-sides up, on baking sheet.
Bake 10 minutes or until cheese is melted.
Serve with a tasty beverage and some chips and gourmet salsa!
